Summary
In this chapter, the kinetics of interfacial enzymes are discussed, and model developed which accounts for the general behavior of these enzymes. The use of interfacial area per unit volume rather than volumetric substrate concentration is highlighted in this treatment. Examples are provided for the effects of changing the apparent enzyme-interface dissociation constant, saturation enzyme interfacial coverage, and interfacial enzyme coverage on the activity of such enzymes.
