Abstract

This chapter provides a survey of the major and minor vegetable oils covering, in particular, their fatty acid and triacylglycerol composition and their production levels. This survey is supported with a number of related topics that include the biosynthesis of triacylglycerols in the plant kingdom, the important minor components present in vegetable oils, the need to modify the natural oils, and the ways in which this can be achieved. Finally, there is a brief account of current production levels of the major vegetable oils and of the trade in these commodities.
