An oxynitrilase from Sorghum bicolor is a highly stereoselective catalyst for the addition of hydrogen cyanide to homocyclic aromatic aldehydes, leading to (S)-cyanohydrins. Reaction in aqueous medium results in ee-values as high as 99%. Reactions with this catalyst can be carried out in a continuous fashion.
