      Cholesterol and fatty acid moieties are the most abundant lipid species in the brain. The blood brain barrier (BBB), formed by tightly juxtaposed endothelial cells, regulates the accessibility of circulating lipids to brain cells. In physiological conditions lipoprotein cholesterol cannot enter the BBB. Cholesterol necessary for myelination and other functions (for example, synthesis of oxysterols and neuroactive steroids) is synthesized in situ by astrocytes and oligodendrocytes (not shown). In contrast, 24-hydroxycholesterol can cross the BBB, thus entering the systemic circulation. Fatty acids, the building blocks of many specialized lipids, derive from blood (albumin-associated free fatty acids) or are synthesized in situ. Notably, in brain cells the fraction of fatty acids subject to b-oxidation is rather small.

      The Rh-catalyzed addition of maleic anhydride to oleic and elaidic acid was investigated. Two different catalysts were used. RhCl3(H2O)3 leads preferred to the acyclic products, whereas Rh(OAc)2 favors the formation of the cyclic products. The influence of the double bond configuration of the fatty acid component on the product composition is also discussed.

      Mixing SDBS and DAB aqueous solution can spontaneously form vesicles at various concentration and mole fraction. The vesicles cannot be tuned by CO2/Ar stimuli. The pH increase by adding NaOH can expand the vesicle size in DAB-rich zone, but the same effect is indistinguishable in SDBS-rich zone.

      Inclusion complexes of astaxanthin with hydroxypropyl-β-cyclodextrin (HPCD) were systematically investigated from several aspects of processing optimization by RSM, spectroscopic profiles of UV, FT-IR, and TG/DTA, and properties of water solubility, storage stability, DPPH radical scavenging activity, and reducing power. The results are useful to conduct the inclusion complexes preparation with good properties and helpful for its applications in food and feed industries as an antioxidant additive.

      The oils have high levels of oleic, omega-6, and omega-3 fatty acids and bioactive compounds including tocopherols, phenols, sterols, and carotenoids. Based on the research results, prolonged storage (8 months) of frozen blackberries and raspberries in sealed plastic bags at −18°C before further processing and use of the pomace as a by-product can be recommended to the food industry.

      A comparative study of the antioxidant activity of hydroxytyrosol (HT) and phosphatidyl derivatives of HT (PHT) added at increasing concentrations to diverse edible oils (lard oil, refined olive oil, and diacylglycerol-rich oil) was performed. Tocopherol as reference was also tested. PHT might be included in edible oils with the double strategy to offer a source of HT and, at the same, stabilize the own lipid matrix, even in a superior mode than HT or the standard tocopherol. Nevertheless, the particularity of each individual oil would determine the magnitude of the protection.

      Twenty-two fatty acids were detected and significant differences were found in the fatty acid proportions of different poultry eggs. A total of 41 volatiles were identified by GC–MS, and E-nose can successfully discrimination different species of eggs.

      Research on the immobilization of lipase SMG1, which is a novel mono- and diacylglycerol enzyme, has been firstly investigated. Compared with the free lipase, immobilized lipase SMG1 presented enhanced thermal stability in the esterification of glycerol with fatty acid. The new finding on the improved operation temperature of immobilized lipase SMG1 will push the enzyme's application in the oils and fats industry.

      New yeast isolate – Pichia caribbica was provided with xylose and oleic acid. This resulted in synthesis of glycolipidic molecule different from typical sophorolipid synthesized by Candida bombicola. Xylose was incorporated as head group, i.e., hydrophilic moiety in place of glucose. The variation in structure imparted better surface tension lowering activity thus showed low CMC value. Also antibacterial activity was enhanced.
