Abstract

The trace metals (Mn, Cu, Zn, Fe, Cd, Pb and Ag) have been determined in various tissues of raw and canned Loligo opalescens squid. As a consequence of processing whole squid, highly elevated levels of cadmium, and to a lesser extent of the other trace metals investigated, were found in the edible parts of canned whole squid.
