Abstract
The mechanical effects of the compression of a yeast cell (Saccharomyces cerevisiae) under high hydrostatic pressure (HHP) are modeled and simulated numerically. The deformation of the cell under pressure deviates strongly from isotropic volume reduction. In the cell wall, von-Mises stress reaches the critical value upon failure at a pressure load between 415Mpa and 460MPa. (© 2004 WILEY-VCH Verlag GmbH & Co. KGaA, Weinheim)
