Using a target group of university students and consultations and discussion with food safety experts, a food safety campaign was developed. The campaign created four key messages focused on the issues “clean”, “cook”, “chill”, and “leftovers”. The campaign was piloted over a 4-week period. A pre-campaign questionnaire was used to assess awareness of issues and a post-campaign questionnaire sought to measure knowledge and campaign effectiveness. Results showed that the campaign was successful in increasing food safety knowledge.

The authors describe food habit activities developed to increase cultural diversity awareness among students in grades 9–12. Activities involve identifying food and culture relationships, examining students’ family food heritage, and interviewing someone from another background about their food habits. Whole-class discussion follows the activities to discover what was learned.

The authors review the role of the United States’ Cooperative Extension as a vehicle for education of a variety of stakeholders in the area of food safety. These stakeholders include “…farmers, land owners, processors, foresters, families, and consumers….” (p. 134). The role of educational assessment and materials development is discussed as it relates to food safety education. Education and training are reviewed, as both are key to developing an effective food safety education program. A list of instructional guidelines components is included.

The evolution of the Food Recovery Network (FRN) is presented. This national network was started by students at the Univ. of Maryland, College Park in 2011. Food collected from campus dining services is donated to people in need at area shelters. The FRN has a number of chapters at colleges and universities through the United States.
