Betsy Baird (February 2, 1938 – December 6, 2013)
Elizabeth A. “Betsy” Baird, former Senior Editor of Journal of Food Science, passed away peacefully on Friday, Dec. 6 after an illness. Betsy started at IFT in 1988 as the News Editor for Food Technology under Editor John Klis. She was later appointed Assistant Editor, writing columns and feature articles as well as IFT News for the magazine. In 2000, Betsy was promoted to Senior
Editor of JFS under then Editor-in-Chief Owen Fennema and Director of Publications Fran Katz. Besides editing accepted articles, Betsy took on significant new challenges in this position, such as transitioning to an online peer-review system and tackling a large backlog of accepted papers.
Prior to joining IFT, Betsy worked as an Executive Assistant, including a stint at the State Dept. in Washington, D.C., and ran her own secretarial consultant business. She held a B.A. in history from Indiana Univ., Bloomington; and a Certificate in Technical Communications from the Illinois Inst. of Technology, Chicago. Betsy was an excellent editor and avid reader with a zest for life. She loved to travel and experience new things.
In November 2003, Betsy retired after 15 years of service to IFT. In retirement, she continued editing as a freelancer—such was her passion for the profession. She also remained active in the Pullman community of Chicago, where she lived, giving tours and sharing her love of the neighborhood's history.
