ABSTRACT

This paper contains a case study of restaurant-based nutrition intervention which is but one part of the cardiovascular research and demonstration project known as the Pawtucket Heart Health Program.

Pawtucket, RI, is a community of 71,204 people with a median age of about 34 years. There is a mean education level of 11 years (less than 50% of the residents are high school graduates) and the mean family income is $19,000. Nearly 44% of all people over the age of 16 are employed in manufacturing industries. It is a middle income, blue-collar city in every sense of the word.

Pawtucket has a problem as well: it has one of the highest rates of heart disease in the country—that is why we were there!
