An interesting duality in the interfacial adsorption of composite microgels is uncovered; while their anchoring is ultra strong, their adsorption occurs spontaneously in absence of any energy barriers. This finding is explored and explained, and the versatility of these particles in stabilizing a wide variety of emulsions is highlighted. Their spontaneous adsorption even allows facile fabrication of microfluidically generated monodisperse droplets.
