To produce a cellulose-based active packaging materials, lysozyme was bound to paper modified by incorporating negatively charged polyelectrolytes. The polymers used for lysozyme immobilization were found to affect only marginally the structural and functional properties of lysozyme, and to facilitate the recovery of its structural features after heat treatment. The chemical properties of the paper may be modified in the production process, allowing the physical performance of the packaging material to be retained while modulating absorption/desorption of the antimicrobial protein.
