This study optimized the limited hydrolysis to obtain tea dregs protein hydrolysate (TDPH).TDPH demonstrated antioxidant activity both in linoleic acid and chicken products. Antioxidant function of TDPH with various MW in liposome-meat products varied. The activity was attributed to the composition of specific peptides/amino acids and the ability to donate hydrogen, to stabilize or terminate radicals, and probably also to form a physical barrier around the fat droplets.
