Virtual Issue on Food Safety

The Journal of Applied Microbiology publishes full length papers on virtually all aspects of applied microbiology. Within this broad remit, the area of food microbiology has been prominent since the Journal's inception in 1938. Food safety is, of course, an important subset of food microbiology and this virtual issue represents typical papers published in the area over approximately the past two years.

L. monocytogenes, Staph aureus, Salmonella spp., Campylobacter spp., Enterobacteriaceae, viruses and prions are some of the microorganisms featured while modelling, investigation of acid resistance mechanisms, effects of bacteriocin, action of u.v. light, hydrogen peroxide, high hydrostatic pressure or gamma radiation and the use of HACCP are some of the approaches taken.
